Description: Penderisco is a lot coming from the Cooperativa de Caficultores de Salgar COOCAFISA, which is made up of over 600 smallholders. These producers typically farm 1-4 hectares (2.5-10 acres) of coffee trees, typically of land that is passed down through generations. Farms often grow coffee among shade-providing nogales and fruit trees like banana, orange, or lime trees.

Harvest here is October-December, followed by a fly crop that takes place from February-May.
The coffees in Penderisco are grown, harvested, and dried all by the producers. After harvesting the coffee is fermented for ≈18 hours, and then wet milled at the farms “beneficio” before being sun dried.
This one is what we consider a daily drinker, or a good base blender. Just meaning that it’s not a coffee with such wild flavors that you’re going to get burned out on it any time soon. It’s got dominant notes of Dark Chocolate and Black Tea, with hints of Black Cherry and Red Apple that together make a solid “coffee flavored” cup profile.
